| 150 g | butter, cold | 3/4 cup |

| 50 g | grated Parmesan cheese | 1/2 cup |

Method
1. Preheat oven to 200°C (400°F). Grease a baking sheet. Line with waxed paper. Grease again.
2. Sift flour onto pastry board. Make a well in centre.
3. Put ricotta cheese in well.
4. Cut cold butter into small pieces over flour.
5. Work all ingredients together quickly into a smooth dough.
6. Chill for about 2 hours.
7. Roll out dough on lightly floured surface to 3 mm (1/8") thickness.
8. Cut into desired shapes.
9. Place on prepared baking sheet.
10. Brush with lightly beaten egg.
11. Sprinkle lightly with Parmesan cheese, salt, paprika and caraway seeds.
12. Bake on middle oven rack at 200°C (400°F) for 7-10 minutes or until light golden.
