Almond Crunch

 
Ingredients 
1 Pkg Dr. Oetker Traditional Cooked Pudding Mix Vanilla 1 Pkg
1/4 Cup Sugar 50 g
2 cups White Wine 500 mL
1 cup Whipped Cream 250 mL
 
Decoration 
1/4 cup Chopped Almonds 30 g
2 tbsp Sugar 30 g
1 tbsp Sweet (unsalted) Butter 10 g
Whipped Cream
Maraschino Cherries

Method

1. Combine pudding, sugar and 125 mL (1/2 cup) wine in a small bowl. Stir until smoothly blended.

2. Heat remaining wine to boiling. Stir in pudding mixture. Bring to boil again, stirring constantly.

3. Remove from heat. Cool to room temperature, stirring occasionally.

4. Beat whipping cream to stiff peaks.

5. Fold into pudding mixture.

6. Spoon into dessert dishes.

Decoration

1. Combine almonds, sugar and butter in saucepan.

2. Heat until golden brown, stirring constantly. Let cool.

3. Chop finely.

4. Sprinkle almond mixture over pudding.

5. Decorate with whipped cream and maraschino cherries.
