Chocolate Mousse with Raspberries

 
Ingredients 
1 pkg Dr. Oetker Chocolate Mousse Mix 87 g
1 cup cold milk 250 mL
10 meringue rings or shells (from Bakery) 10
2-3 tbsp sherry or brandy 30-45 mL
1 cup fresh or frozen raspberries 250 mL
1 pkg Dr. Oetker Vanilla Sugar 9 g
1 cup whipping cream 250 mL
1 pkg Dr. Oetker Whip it 10 g
1 pkg Dr. Oetker Vanilla Sugar 9 g
1 tbsp icing sugar, sifted 15 mL

DIRECTIONS:

 

1. Prepare Dr. Oetker Chocolate Mousse with 1 cup (250 mL) milk according to package directions.

 

2. Break up 1/2 of the meringue shells and place in dessert glasses. Drizzle with brandy or sherry. Cover with prepared mousse.

 

3. Combine raspberries (drain well if using frozen) and Dr. Oetker Vanilla Sugar. Flavour with a small amount of sherry if desired.

 

4. Beat whipping cream to soft peaks. Gradually add Dr. Oetker Whip it, Dr. Oetker Vanilla Sugar, and icing sugar. Continue beating to stiff peaks.

 

5. Place a meringue ring on top of mousse, fill with whipped cream. Decorate with whipped cream and raspberries.

 

Makes 4-5 servings.
