Hawaiian Cocktail

 
Ingredients 
1 fresh pineapple 1
1 pkg Dr. Oetker Vanilla Sugar 9 g
1 1/2 cups fresh or canned mixed fruit, drained and diced 375 mL
1 pkg Dr. Oetker Strawberry Mousse 96 g
3/4 cup cold milk 200 mL
4 tbsp apricot or cherry brandy 60 mL
1 cup whipping cream 250 mL
1 pkg Dr. Oetker Whip it 10 g
1 pkg Dr. Oetker Vanilla Sugar 9 g
1 tbsp icing sugar, sifted 15 mL

DIRECTIONS:

 

1. Cut pineapple in half lengthwise. Remove fruit leaving a 1 cm (1/2") border.

 

2. Drain and dice fruit. Mix with Dr. Oetker Vanilla Sugar and 1 cup (250 mL) of mixed fruit. Reserve ½ cup (125 mL) of the mixed fruit for garnish.

 

3. Prepare Dr. Oetker Strawberry Mousse with 3/4 cup (200 mL) milk according to package directions. When whipped, fold in brandy. Turn into pineapple shell and chill while preparing whipped cream.

 

4. Beat whipping cream to soft peaks. Gradually add Dr. Oetker Whip It, Dr. Oetker Vanilla Sugar and icing sugar. Continue beating to stiff peaks.

 

5. Top mousse with mixed fruit and decorate with whipped cream.

 

Makes 5 servings.
