| 50 g | apricot jam | 1/4 cup |
| 50 mL | rum | 1/4 cup |
| Brushing | ||
| 30 mL | hot apricot jam | 1/4 cup |
| Lemon Glaze | ||
| 250 g | icing sugar, sifted | 2 1/2 cups |
| 15 mL | lemon juice | 1 tbsp |
| 30 mL | water | 2 tbsp |
Method
Batter:
1. Preheat oven to 175°C (350°F). Grease a 25 cm (10") springform pan.
2. Prepare Dr. Oetker Organics Cake Mix Vanilla according to package directions.
3. Spread batter evenly in prepared pan.
4. Bake on lower oven rack for 45-50 minutes.
5. Remove from pan. Cool completely.
Filling:
1. Bring the jam to a boil and add the rum.
2. Slice the cake once to make two layers.
3. Spread one-half of the jam on bottom layer and top with second layer.
Brushing:
1. Spread sides and top of cake thinly with remaining jam.
Glaze:
1. Combine sifted icing sugar and lemon juice.
2. Add water until a thick paste is obtained.
3. Spread over cake immediately.
