Mexican Apple Cake

 
Ingredients 
1 pkg Dr. Oetker Organics Oatmeal Cookie Mix 1 pkg
3 eggs 3
 
Filling 
8 apples 8
juice of 1/2 lemon
45 mL butter, melted 3 tbsp
60 g sugar 1/4 cup
1 pkg Dr. Oetker Vanilla Sugar 1 pkg
75 g almonds, sliced 1 cup

Method

Preheat oven to 160°C (325°F). Grease a 23 cm (9") springform pan.

Batter:

1. Prepare Dr. Oetker Organics Oatmeal Cookie Mix according to package directions. Use 3 eggs instead of one egg.

2. Turn two-thirds of the batter into prepared pan.

Filling:

1. Peel and Slice apples.

2. In a double boiler, heat apple slices in lemon juice until soft. Cool completely.

3. Fold in butter, sugar, vanilla sugar and almonds. Mix well.

4. Spread apple mixture over batter in pan.

5. Using a teaspoon, scoop out small portions of remaining batter and place on top of apple mixture.

Bake for 60 minutes.
