|0.15 cup||granulated sugar|
|0.33 cup||cocoa powder|
|1||egg lightly beaten|
|1 cup||graham crumbs|
|0.5 cup||blanched almonds chopped|
|1 package||Shirriff Coconut Pudding & Pie Filling|
|about 8 oz||dark chocolate|
In a saucepan over medium heat melt butter. Once melted, remove from heat and add in sugar and cocoa powder. Gradually whisk in egg and then return to heat, constantly stirring until the mixture thickens (1-2 minutes). Remove from heat and add in graham crumbs, coconut and chopped nuts.
Spread graham mixture out on a parchment lined baking sheet to cool.
Prepare the Coconut Cooked Pudding according to the package and allow to cool.
To assemble parfaits you will need 4-6 glasses or jars of your choice. Spoon ¼ cup coconut pudding into the bottom of each glass, top with graham mixture and repeat until you have reached the top of your vessel.
Melt dark chocolate and butter in the microwave (taking care not to burn) and drizzle over top.
