Preheat your oven to 200°C. In a mixing bowl, whisk together the flour, sugar, Dr. Oetker Baking Powder, and salt. In a separate bowl, beat the eggs and then add the melted butter, Dr. Oetker Vanilla Paste, and almond extract. Stir the wet ingredients into the dry ingredients until a dough forms. Fold in the almonds.
Divide the dough in half and shape each half into a log approximately 3 inches wide. Place the logs on a baking sheet lined with parchment paper. Flatten the logs slightly and bake them in the preheated oven for 15 minutes or until they are golden brown.
Remove the logs from the oven and allow them to cool for about 10 minutes. Using a serrated knife, slice the logs diagonally into 1/2-inch thick slices.
Place the biscotti slices cut side down back on the baking sheet. Bake them for an additional 10 minutes, flipping them halfway through to ensure even baking. The biscotti should be dry and crisp. Let them cool completely on a wire rack before serving or storing.
